Day 3: Sugar cane and the oldest water mill in Intag
Travel 5km to the oldest water mill in Intag – on horseback, foot or by truck, depending on preferences. Stop en route (if on foot or horseback) at a deep river pool, an idyllic setting for bathing.Or travel 4 km (about 3 miles), to experience coffee and/or sugar production at our own sub-tropical riverside finca.
Experience the fascinating art of traditional cane sugar production by water mill. Traditional, unbleached sugar is produced from the crushing of the cane, then through various stages of heating and evaporation to produce delicious organic sugar, by mill owner Ivan Ayala. This type of sugar has its full complement of vitamens and minerals - quite different from the sugar we are used to in supermarkets.
Lunch at the mill farm house, then set off for a tour of the farm, which includes a demonstration of the cultivation of semi-tropical crops such as yucca, coffee and banana.
See the milling of maize by water mill, and the traditional preparation of maize tortillas on a clay plate known as a tiesto.
